Ingredients of Krembo
- Prepare of Filling.
- Prepare 100 g of egg whites.
- You need 200 g of sugar.
- It's 60 ml of water.
- It's 1/4 tsp of salt.
- It's 1/8 tsp of lemon acid/juice.
- It's 2 g of agar.
- You need of Base.
- It's 2 sheets of wafer.
- You need of Glaze.
- Prepare 150 g of chocolate.
- It's 15 g of cocoa butter (optionally).
Krembo instructions
- Cut circles of wafer sheet using cookie cutters.
- Put sugar, agar and water in the sauce pan and set it on medium fire.
- Meanwhile start beating egg whites until you get soft peaks.
- When caramel reaches 117°C take it off the heat.
- Set it aside for half a minute so it'll stop bubbling.
- Pour it into the egg whites while beating it at high speed.
- Keep mixing it at high speed until merengue colds down and becomes glossy.
- Put merengue in the piping bag and pipe it on water circles.
- Melt chocolate and add cocoa butter (cocoa butter helps to make it more liquidy and glaze).
- Glaze them with chocolate and decorate with crushed nuts (optionally).
- Let them cool in the fridge and serve :).
